SOURCE: CONDENSATION & WATER DROPLETS
Condensation takes place when warm, humid air encounters cooler surfaces, including ceilings, pipes, air conditioning units and ventilation systems. This process can cause water droplets to form and drip onto exposed food products, food contact surfaces, packaging materials and production equipment.

MONITORING METHOD
HOW:Carry out visual checks on ceilings, pipes and equipment to identify any signs of condensation. Use a hygrometer to measure and monitor relative humidity levels, while also checking for any water buildup.
WHEN:Before production begins, during production and after production. Additional inspections should be conducted during high-humidity conditions or whenever condensation is observed.
WHAT:Condensation, water droplets, ceiling conditions, leaking pipes, humidity and ventilation conditions.
