Modern commercial soju is made from diluted distilled ethanol, water, sweeteners, and flavorings. The base alcohol is typically fermented from starches like tapioca, sweet potatoes, barley, or wheat. Traditional artisanal soju uses fermented rice and a Korean yeast starter called nuruk.
