Carbohydrate
What is it
Cabrbohydrates are stored energy, synthesised by plants from carbon dioxide, water and nuclear energy (sun)
Biological molecule consisting of 3 atoms:
- Carbon (C) - 'Carbo'
- Hydrogen (H) - 'hydr'
- Oxygen (O) - 'ate'
Often written as CHO
Has the emperical chemical formula of (CH2O)n
- n ranges from 3-7
- Carbon atoms attached with single bonds to hydrogen and oxygen
-
CHO Structure
Carbohydrates are defined according to their size: Smallest - Largest
- Monosaccharides
- Disaccharides
- Oligosaccharides
- Polysaccharides
Monosaccharides
- Glucose C₆H₁₂O₆
- Galactose C₆H₁₂O₆
- Fructose C₆H₁₂O₆
-
-
Oligosaccharides
- 3-10 monosaccharides bonded together
- Raffinose, stachyose, fructans
- Found in plants - legumes, garlic, cereals
- Cannot be digested by endogenous enzymes in the gut
- Fermented by bacteria in the large intestine
- Some (e.g. insulin) are used in foodstuffs as prebiotics
- Promote the growth of potentially beneficial bacteria
Polysaccharides

Starch

Food sources: Bread, pasta, rice, potatoes, bananas
