Sugar measurement
Clean the prism surface at the bottom of the sample well with distilled water and dry it thoroughly with a soft cloth.
Using a plastic pipette, place 1-2 drops of the clear sample liquid onto the prism, completely covering its surface.
Hold the refractometer horizontally and wait for about 30 seconds for temperature equilibration between the sample and the device.
Look through the eyepiece and read the scale where the boundary between light and dark areas falls. This value is the percentage of soluble solids (°Brix), primarily sugar.
After measurement, rinse the prism and well with distilled water and wipe dry for the next sample.
Sensory evaluation
Prepare the samples to be evaluated (e.g., sauerkraut from different jars, kombucha with different flavors).
