Assembly Steps
Cook chicken with onions, garlic, and mushrooms until soft
Stir in butter and flour, cook to a roux
Add stock and milk/cream, simmer until thick

Assembly Steps
Halve/slice squash, remove seeds, roast with oil and seasoning
Blend roasted peppers with onion, garlic, lemon juice, oil & seasoning for coulis
Plate roasted squash, drizzle with coulis
Serve hot with seasonal vegetables, mashed potato, and gravy
