Process of canned foods
Preparation of ingredients. Selection, fresh ingredients are selected based on quality and ripeness. Cleaning, vegetables are thoroughly washed to remove dirt and contaminants. Cutting, vegetables are often cut into manageable pieces to fit into cans.

Vegetables may be blanched in boiling water for a short time to kill enzymes that could affect flavour, colour and texture during storage.
