pH levels: Enzyme activity is at a maximum when at optimum pH. pH levels can change the shape of the substrate or enzyme, which causes them to no longer be complementary. When the pH changes to be above or below the optimum pH, the enzymes are denatured. As shown in the diagram below, the rate of reaction is highest at the optimum pH level. Pancreatic amylase has an optimum pH of 6.7 to 7, however, the optimum pH varies depending on the enzyme (D, Harvey, n.d).
