Eric suddenly gaffaws.

Since Eric does this "suddenly", it was involuntarily, so Eric is involuntarily reinforcing Edwardian Society's Patriarchy.
context: Audience know WW1 started in 1914 and men like Eric were conscripted. This would be the last time Eric is laughing - he is not laughing at the end of the play.
Not quite at ease, half shy, half assertive.
"not quite at ease" because guilty of raping Eva? Or because he holds a different view to his father on Capitalism.
-
Or it could imply that Eric is young and still developing, which foreshadows a possible embodiment of Priestley's moral message by the end of the play.
Contrasting adjectives make Eric seem untrustworthy, which is necessary cuz he repeats his father verbatim.

"Not really" theft
On one hand, Eric helped Eva.
On the other hand, he's following his father's capitalist teachings (a man...has to look after...his family too).
It would be irrational to assume Eric gave Eva the full 50 pounds, because it would be 40 weeks of if Eva worked at Birling & Co.
Priestley wants us to see that when money is involved, even when helping someone, it will lead to problems. As a result, we must embrase socialism as the true way of life.
