Vietnamese coconut candy
Vietnamese coconut candy first appeared in Mo Cay district, Ben Tre province - the land of Vietnamese coconut trees. It was created by Mrs. Nguyen Thi Ngoc (born in 1914) with the original name Mo Cay coconut candy.
Typical Vietnamese coconut candy is usually cube-shaped, slightly flat, brown or green-white in color depending on the ingredients.
The candy is wrapped around a layer of edible rice paper, which helps prewrappeent watering, is less sweet and doesn't stick to your teeth.
Ingredients for making candy
Coconut milk (also known as coconut milk) is juice from coconut meat (scraped and chopped coconut meat) after being pressed with a mesh cloth. Note that coconut milk taken from the first squeeze is the most delicious, nutritious and fatty.
The malt used to make Vietnamese coconut candy is derived from sticky rice germ. The rice is naturally incubated and germinated to the desired size for use in the process of making coconut candy
Raw sugar is often preferred according to the coconut candy recipe of ancient Ben Tre people. However, refined sugar has a beautiful color and a mild sweet taste

Recipe for making coconut candy
Step 1: Take the coconut pulp, remove the dry and hard brown shell. Then use a coconut shredder. You should use fresh brown coconut.
Step 2: Use a mesh cloth or juicer to get coconut milk. Remember to only take the first juice to ensure the delicious taste of coconut candy.
Step 3: Mix coconut milk with malt, refined sugar and spices.
Step 4: Put the mixture in a pan over low heat and stir well until the Vietnamese coconut candy reaches the desired consistency. Note that in this step you must stir well because this mixture can easily burn.
Step 5: Add flavor to the coconut candy if desired, then add coconut oil to create a richer taste. Pour the mixture into the prepared mold lined with parchment paper and wait for it to dry
Step 6: Cut into small pieces, wrap with wax paper and enjoy. Coconut candy can be cut to size 1cm x 1cm.
