WINE
-
-
Wine was predominantly produced by those of high wealth, as the wait time between planting and fruiting inferred long periods without profit
Wine relied heavily on the pottery industry, as ceramics provided Amphorae and other vessels to store the wine in
Wine was rarely stored within city or town premises, instead wares were kept in country villas and other storage facilities
For example: Figure 7.5, Embedded dolia in the courtyard of a villa at Boscoreale
This is further reinforced by Pliny the Elder, who writes "Districts with a mild climate store their wine in jars and bury them completely or partially in the ground thus protecting them from the weather"
OIL
"The first Oil of all, produced from the raw olive before it has begun to ripen is considered preferable to all others in flavour."
"To obtain a result both abundant and of excellent flavour, the best time to gather is when the berry is just on the point of turning black".
Oil, much like wine, was stored and pressed outside the city in Dolia, though there have been evidence of oil presses in homes. oil presses and store rooms needed to be lit by large fires.
Whilst Oil was used for cooking, it had other more vital uses, such as in lanterns, but was also a luxury, used in gymnasiums and in the manufacture of perfume.

Importance
The sheer number of bakeries in Pompeii and Herculaneum are a testament to the importance of bread as a staple food for the citizens
There is archaeological evidence for over 40 bakeries in Pompeii, not all were in operation. at the time
Not all bakeries milled their own flour which is evidence that there was trade between the different bakeries
