Enzymes
In order for a reaction to happen the substrate must bind to the enzyme at the active site using weaks bonds such as hydrogen bonds
This process can include something called induce fit to the active site. This is when the active site slightly changes to fit around the substrate better

gelatin is made from animal collagen, which is a protein that makes up connective tissue.

canned pineapple doesn’t have bromelain due to the canning process. The canning process consists of heat which destroys the bromelain and denatures the enzyme.
