why we assume so?

less and less assumptions need to be made because a lot of occurence/phenomena can be proven (evidence)
eg. NS, before technology, scientist assumes stuff and their finding align with reality, so still accepted as knowledge
some methodology just need latest evidence to produce its knowledge. it is already flexible, able to change with latest findings

Is the evidence is improved or falsifying evidences before ? How about new evidence that is new and didn't prove before?

we do not share value with those who gathered evidence in the past, so cannot compare the evidence in terms of "strength"
