Manufacture of Vegetable Oil
1. Seed Preparation
eg:
rapseed
seeds are prepared by being cleaned, ground and crushed through break rollers and heated
2. Oil Extraction
oil is removed from seeds by pressing or by the addition of a solvent
3. Refined
oil undergoes a refining process to remove impurities
this includes degumming and neutralising
degumming:
addition of hot water followed by centrifuging (rotating at high speed), which causes impurities to fall to the bottom
neutralising:
involves mixing oil with an alkali, when changes free fatty acids into insoluble compounds that can be easily removed from oil
4. Bleached
oil is bleached with Fuller's Earth to lighten the colour
fuller's earth
- any clay material that has the ability to absorb impurities or colouring bodies from fats
5. Filtered
oil is filtered to produce a clear liquid
7. Packaged and Labelled
packaged in containers of varying sizes,
eg:
500ml or 1litre, and materials
eg:
plastic or glass
then labelled with details including the type of oil, ingredients, storage instructions, allergy advice and nutritional information
6. Deodorisers Added
deodorisers are added to remove putrid odours
