Yağlama
A dish similar to lasagna, consisting of thin layers of flatbread (like bazlama) stacked with a flavorful minced meat sauce made with tomatoes, onions, and spices. It is traditionally served with yogurt.
Nevzine
A unique dessert made from flour, tahini (sesame paste), and walnuts, topped with a syrup made from sugar and grape molasses. It is a specialty of Kayseri.
Sucuk (Turkish Sausage)
A dry, spicy sausage made from beef and seasoned with garlic, cumin, and red pepper. It is often pan-fried and served with eggs (sucuklu yumurta) for breakfast.
Kurşun Aşı
A traditional soup made with small bulgur dumplings, chickpeas, and a rich, spiced broth. It is a hearty and nutritious dish, especially popular during winter.
Pastırma (Cured Beef)
Kayseri is the birthplace of pastırma – air-dried, cured beef coated with a special spice paste called "çemen" (made of fenugreek, garlic, and paprika). It is commonly eaten for breakfast or added to various dishes.
Mantı (Kayseri Dumplings)
This is one of the most famous dishes of the region. Miniature dumplings stuffed with beef or lamb are cooked and served with yogurt, garlic and a sauce of butter and red pepper.
