Wheat allergy
Wheat allergy is an allergic reaction to eating foods containing wheat, and in some cases, inhaling wheat flour. Less than 1% of people have a Wheat allergy and it is much more common in children especially those who are introduced to wheat after 6months
Gluten intolerance
Gluten intolerance causes a minor reactions after eating gluten, causing discomfort, pain, bloating, and fatigue. Despite its uncomfortable symptoms it does not cause permanent damage unlike Coeliac disease. 6% of the population have a gluten intolerance.
Coeliac disease
Coeliac disease is an autoimmune disease which results in the immune system attacking the small intestines when gluten is ingested - this can symptomatic or asymptomatic but damage is done either way. Over time if this damage continues there is an increased risk of cancers involving the bowel or small intestine. The only way this can be treated is a strict life long gluten free diet. Under 1% of people are believed to have Coeliac disease and only 1/3 of them are diagnosed. Coeliac disease is twice as common in women then men.

Gluten free food tends to be much more expensive to buy. This is because it tends to cost manufacturers 2x the expense to use gluten free flour than regular flour. This can have an impact on the food that people can afford to buy and this can then have an impact on the nutrition value of the food. On average a gluten free loaf of bread is 6.1x more expensive then a loaf of bread made with wheat flour.
