They did this by drawing blood from a dog, a sheep, a goat, a rabbit, a guinea pig and a human. From these samples, they extracted the lipids from the blood and placed a few drops of this extract onto a tray of water. This had taught them that the cell membrane must be a bilayer of phospholipids with the hydrophobic lipid tales tucked in the middle away from the water while the hydrophilic heads are on the outside so they can be constantly exposed to water.
