MAITRE D’ HOTEL DE RECPTION
Hostess
Takes care of the reception of the guest
Must be a person of pleasant personality, charming nature with good communication skills
She receives the guest at the entrance and
guides them as per the need
She takes the table reservation and allocates the table
She briefs the guest about the type of restaurant - eg: type of menu, operational timings etc.
Takes note of special events like birthday, marriage
anniversary etc of the guest.
Keeps track of the regular and VIP guests
Assists in taking proper feedback by ensuring that the guest fills up the guest comment card
Reports to the restaurant manager
MAITRE D’ HOTEL
(HEAD WAITER / SENIOR CAPTAIN)
He is responsible for the proper service in the outlet
He also co-ordinates with the kitchen department.
Supervises captains, waiters, waitress and other junior staff
In charge of guest table reservation
Schedules duty for service staff, assigns service stations
Ensures proper stock levels
Makes requisitions (places order) for supplies, condiments, linen, etc
Handles guest complaints
Suggests food and beverage to the guest
Reports to the restaurant manager
Ensures that all the opening and the closing duties are completed and the tables are reset
