2. American Service / Plated Service
Informal service in casual dining restaurants, fast food outlets, coffee shops
Dishes are neatly plated by the kitchen staff
Dishes are served to the guest from the

1. English Service / Silver Service
Dishes are presented and served to the guest from the
left
side using serving spoon and fork

Formal service in upscale resturants
3. French Service / Family Service
The dish is presented to each guest from the
left
-hand side to help himself/herself
For a small party of two to three guests, the dishes are placed on the table for the guests to help themselves.
Or all dishes are placed on the table and the host may serve all his guests at the table and serve himself finally.
Specialty restaurants, upscale restaurants
4. Russian Service / Sideboard Service
Elaborate service, upscale restaurantsnot practiced much in recent times.
Large joints, roast poultry, whole fish etc with elaborate garnish, are presented to the host, then taken to the sideboard, carved, portioned, and served to the guests with service spoon and fork
After service, dishes are kept on a hot plate in the sideboard to keep them warm.
Each course is served from the sideboard.
6. Tray Service
This style is practiced in flights, hospitals, room service, institutional catering etc
Dishes ordered by guests are neatly arranged on a tray with necessary cutlery and taken to their rooms /beds/seats by waiter
Special trays are available to retain temperature of dishes
5. Gueridon Service / Trolley Service
Dishes are prepared, carved, dressed, or flambéed on a trolley in front of the guests and served with service spoon and fork.
The design of a trolley varies according to its purpose - eg Carving trolley, flambé trolley, hors d’oeuvre trolley, cheese trolley, liqueur trolley, dessert trolley etc
Practiced in luxury, up market restaurants.
