From Farm to Fork
Foodborne zoonosis can starts where the food is produced at the farm and ultimately to food on the table
-
To minimise risks of food contamination, action is needed at all stages of the food chain from production at the farm through to human consumption, i.e. ‘from farm to fork’
Prevention, detection and control of diseases at the primary production phase reduce the risk of human illness from indirect and direct contact with infected animals
Indirect(already infected food source infects a clean food source before being consumed) -Slaughtered carcasses can be contaminated via contact with the intestinal contents of the chickens ( no proper separation from intestine which has the most bacteria)
Direct - Human salmonellosis and campylobacteriosis can arise from consuming the infected poultry
