Safety Food Storage in Commercial Kitchen.
First in First out rule(FIFO)
By using this rule we can protect both food quality and food safety
Store meat below other items
In this manner we no need to worry that meat juices will contaminnated other food items
Food should be stored in
air tight container
Air tight container make the shelf life of food to increase
use food storage boxes,ingredient bins,food pans with lids
This is to ensure your kitchen is safe from bacteria and infestations.
Store the food off the floor
Food must store minimum 6 inches above the floor
Prevent contaminants such as dust and water
Temperature control
Refrigerator must have temperature to make sure the temperature is not below danger zone.
Never overloaded your
refrigerator
If have many item in refrigerator, it is harder to
maintained the temperature
Keep organized and clean
Anywhere if we see any food spills or dirt, immediately we should clean it
Properly organized with labelled items to reduce the amount of waste
Throw it out when in doubt
Throw the food if you have doubt on its food safety
