Ingredients
big potatoes
oil
chopped white onion
ground annatto
grated cheese

Tomato and onion curd
avocado slices
Lettuce
Fried eggs
chorizo
Peanut butter
milk
minced leek
finely chopped coriander
rehash
Salt and pepper
preparation of peanut sauce
In a frying pan, place a little of the refried food so that it melts, then place some of the previously chopped leek.
Then we put the milk to place the peanut paste and stir continuously, until it is mixed very well.
This will thicken, remove from heat and add salt and pepper to taste. Finally a touch of coriander and ready to savor.
Preparation
Boil the potatoes with water and salt
prepare a refried with onion and achiote
Make some puree with the potatoes.
Add the refried onion and salt to the mashed potatoes and mix well
Form somewhat small balls with the potato mixture, make a hole in the middle of each ball and fill it with the cheese.
Crush the balls until they have the shape of thick tortillas and then cook them
Cook tortillas in a hot skillet until golden brown on both sides.
Finally we can serve the yapingacho with fried egg, with some peanut sauce, chorizo, tanned tomato, onion and avocado slices.
