PREPARATION
Cut the onions into small squares.
Put the onion in a pot with achiote and garlic and let it fry.
Once the onions are soft add 2 liters of water let it boil for 5 minutes then add all the vegetables once they are soft add the cheese, boiled everything add salt to taste.

PREPARATION
Boil the potatoes with water and salt until soft.
Heat the oil over medium heat and prepare a refried mixture with the onion and achiote, cook until the onions are soft, about five minutes
Mash the potatoes
Put the peanuts in the pan until they can be peeled.
Form small balls with the potato mixture, make a hole in the middle of each ball and fill it with the cheese.
Once the peanuts can be peeled, we liquefy them and put them in the pan with the refried mixture, stirring slowly until they thicken.
Cook tortillas on a flat grill or in a hot skillet until golden brown on both sides.
Serve llapingachos with fried egg, peanut sauce, chorizo, tomato and onion curtido, slices of avocado, and a little bit of the avocado.
CALDO DE BOLA
INGREDIENTS
1 tablespoon garlic
a diced tomato
a green bell pepper
Some teaspoons ground cumin
A finely chopped cilantro
½ tablespoon dried oregano
2 liters of water
1 pound of beef bones
a pound beef, cut into chunks
some peeled green plantains
Some carrots
Some large yucca, peeled and cut into medium pieces
PREPARATION
First we make a refried sauce over low heat in a large pot, add the onion, garlic, tomato, bell pepper, cumin, coriander, oregano, salt and pepper.
Add 10 cups of water, the pound of beef bones, the meat cut in pieces and the 4 plantains cut in half. Let it boil for about 30 minutes over low heat.
Add the yucca and wait until the beef is soft
Add the carrots, corn, cabbage and cook for 15 minutes and wait until all the ingredients are ready.
Once all the ingredients are cooked, let it cool and remove the bones from the broth
Remove the plantains to crush them and prepare the dough for the meatballs or green balls.
We fry the onion, tomatoes, garlic, bell pepper, cumin and salt over low heat.
Add the minced meat, carrots, and cilantro.
Add peanuts and mix everything well until it has the consistency of the stuffing.
We grate the raw plantains and to this dough we add the cooked plantains, previously crushed until we obtain a uniform dough.
In the middle of the ball we make a hole where we will fill with the condumio or meat filling previously prepared.
For this, we must add the green balls or meatballs to the meat broth and boil for 15 minutes over low heat, avoid stirring the broth, so that the balls do not break.
In each dish add chopped cilantro and ready.
