My favorite food and how to prepare it
"Seco de Pollo" is my favorite food
INGRIDIENTS
2 teaspoons ground cumin
2 teaspoons of Annatto powder
5 assorted pieces of chicken
3 tablespoons of vegetable oil
2 diced red pepper Units
1 diced medium pearl onion
2 Tomatoes, peeled and sliced
5 garlic cloves, minced
2 diced of "Caldo de gallina Maggi"
1 Tablespoon Cilantro, chopped
2 Cups of Blonde Beer
3/4 Cup of Naranjilla Juice
Aji Criollo
1/4 Cup Cilantro
1/4 cup fresh parsley
2 teaspoons dried oregano
Salt and pepper to taste
HOW TO PREPARE IT
For the chicken you need to
season the chicken pieces a few pieces with cumin, achiote and salt and pepper.
Place the beer, naranjilla juice, onion, garlic, tomato, pepper, chili, cilantro, parsley and oregano in the blender, reserving a little of the latter 3 for the final presentation. Booking
In a large pot place the oil and heat it, once hot place the chicken pieces to brown once golden add the sauce from the blender and bring to a boil. Once boiling, add the some MAGGI Chicken Stock cubes, lower the heat and cook slowly for 45 minutes.
The sauce is thick and the chicken meat very tender. Add the remaining cilantro, parsley and oregano and serve with yellow rice, fried sweet plantains and avocado.
