Preparation
- Peel the onion, and chop it into fine julienne strips, set aside. In a mortar, crush the garlic and make a paste with the crushed garlic, salt and pepper.

- Rinse the chicken pieces, and pat them dry with a kitchen towel. Put them in a large bowl. Season chicken with garlic paste; rub very well so that all the chicken pieces are well impregnated with the marinade. Cover the bowl, and put it in the fridge for a couple of hours. If you can do it the night before cooking the chicken, even better.

- Remove the chicken from the fridge. Pour the oil into a thick-bottomed pot, and turn the cooker to full heat. When the oil is very hot and you notice small bubbles on the surface, it is time to place the chicken pieces, with the bone facing up. Cook them for five to seven minutes until they are nicely browned.

- After this time, turn them over and add the chopped onions. Cook for about five more minutes.

- Immediately add the Coca-Cola, and reduce the temperature to medium heat. Cook covered for about ten more minutes, turning the chicken pieces every now and then.

- When you notice that the Coca-Cola has reduced by half, dilute the cornstarch in a quarter cup of water, stir until well dissolved, and sprinkle over the chicken. Stir well. Cook for five more minutes until the sauce thickens and done.

You can pair this chicken with just about anything, mashed potatoes, French fries, rice, and even pasta with white sauce.
