MY FAVORITE FOOD
My favorite food is rice with bean stew and roast beef
Preparation
1Heat the oil or butter in a saucepan over medium heat.
2Prepare the rehash for the stew, adding the onion, pepper, tomato, garlic, cumin, achiote, salt and two tablespoons of chopped coriander; reserve another two spoons for the end.
3Cook the refrito for five minutes or until all the ingredients have softened, stirring occasionally.
4Add the previously soaked cholo beans about two hours before or the night before and lower the temperature to a simmer. Add the stock (previously tempered), let it cook until the beans are tender, between 45 minutes to 1 hour.
5Rectify the flavor and add the remaining coriander.
6Serve with previously cooked rice, fried or roasted meat and fried potatoes.
7Serve the stew with minced coriander, white onion and bits of fresh or Creole cheese.
50ml orange juice

15 ml of achiote
INGREDIENTS
15 g finely chopped garlic
30 ml of vegetable oil or lard
50 gr of paiteña onion (julienne)
450 gr of red cholo beans (soaked the night before)
280 gr of white rice (cooked)
3 g of ground cumin
20 g kidney tomato (thin strips without seeds)
800 gr of roast beef loin (thin portions of 200 gr)
50 gr of green pepper (brunoise)
1500 ml of chicken stock
100 gr of green plantain (patacones)
