The Forest
Has duel connotations

It can also be a place of refuge and although it is not always safe, the forest allows people to have the time and space to reflect and change. Often when people/characters come out of the woods they are a changed person and for the better.
Rapunzel Herself
In a way she is named after the vegetable that her mother was unable to ignore. In this, she is a symbol of temptation and desire. Rapunzel translates as a type of lettuce – the fated food that her mother craved.
The Enchantress desires and treasures Rapunzel so much, that she goes to what some would call excessive lengths to control her and keep her hidden away for herself.
Tears
Sign of compassion

But also in healing his eyes, she is in a way redeeming the enchantress and/or forgiving her for her wrong doing
