Water is named the universal solvent because it is capable of dissolving more substances than any other chemical. This is largely due to water's polarity, which enables it to dissolve many different molecules. Take salt for example - salt dissolves in water as it is an ionic compound, comprised of a negatively charged chloride ion and positively charged sodium ion. As water is polar, its positive side attracts chloride ions while its negative attracts sodium ions, pulling the salt compound apart. Once separated, the sodium and chloride ions are surrounded by water molecules, resulting in a homogenous solution.
