Carbohydrates
Examples
Starch
Amylose
Unbranched
Amylopectin
Branched
Cellulose
Straight and unbranched
Has cross linkages between chains of cellulose due to hydrogen bonding
Monomer of cellulose is
beta glucose
. Thus every alt glucose is inverted 180 degrees.
Structural polysaccharide due to the cross linkages making the structure very strong. Harder to break
hydrogen bond
than glycosidic bonds.
Glycogen
Very highly branched
The monomer is
alpha glucose.
Thus adjacent monomers have the same orientation.
Storage polysaccharides due to the extensive branching, allowing for the enzymes to
gain back glucose more efficiently.
Bonds
Glycosidic bonds
Formed by condensation reaction by the OH bonded to carbon 1 and the H of carbon 4.
Broken by hydrolysis.
Side note the OH bonded to carbon 1 for alpha glucose is facing away from the CH2OH.
