An enzyme can only work within an optimum pH 'window' and also when the temperature is below the optimum temperature, however, the closer this is to the optimum the higher the enzyme activity levels
If the conditions aren't like the ones described above the enzyme will denature, including the active site (the active site loses the complementary shape), and the enzyme cannot be used again
