What criteria do scholars use to determine the historicity of an action or saying of Jesus as probably historical?

Discontinuity: words or deeds of Jesus that cannot be derived from Judaism before him or Christianity after him
Multiple attestation: focuses on material witnessed by a number of different independent streams of early Christian tradition.

Rejection: Jesus does not tell us directly what material is historical but it does direct our attention to those words and deeds.

Opinion on the Gospels?
I think there is some historical truth to the Gospels. Should the Gospels be used as a primary source to study history? No, but they can be used as a supplementary piece. The focus of the gospels was to highlight the supernatural, extraordinary aspects of Jesus' life and therefore shouldn't be used as historical, reliable documents.
