"ape-like fury" suggests primitive nature of Hyde attack, linking back to Darwin's theory of eveolution and our true nature

"The old gentleman took a step back, with the air of one very much surprised" his switch of personality is shocking and scary for Carew, suddenly his trustful converstaion has turned into a dangerous situation for Carew. Carew has become defensive whereas Hyde is offensive.

" a very pretty manner of politeness" suggests Carew's professionalism through his understanding of gentleman behaviour and charming others.

"the moon shone on his face as he spoke, and the girl was pleased to watch it" Carew has a hypnotising beauty that makes him very admirable and charming due to his upper class gentleman position.
