Summary
The gospel of Thomas is comprised of 114 sayings and parables of Jesus which is only organized in a simple list. This means that the narrative is not organized in a specific manner. This Gospel also does not mention anything about Jesus' life, death or resurrection.
The gospel of Thomas is considered gnostic because it contains gnostic themes in the writings. The gospel contradicts the canonical gospels because it is not a narrative of the accounts of Jesus' life, but rather contains sayings attributed to Jesus

Summary
The Gospel of Peter describes Jesus' trial, burial, resurrection. Then the gospel moves on to the story of Jesus' appearance to the disciples.
The gospel of Peter is heavily gnostic. It takes very gnostic approaches to Jesus' crucifixion like saying that Jesus was laughing and warning against people who "cleave to the name of a dead man, thinking they shall become pure". The gospel of Peter is considered not canonical however because it disagrees with very important topics of Jesus' physical death.
