The different R-GROUPS are able to react with eachother, forming different bonds. These lead to long chains of amino acids folding into complex structures.
Amino acids join when the amine and carboxylic acid groups connected to the central carbon atoms react.(R-GROUPS are not involved at this point)
The different sequences of amino acids lead to different structure with different shapes being produced. The very specific shapes are vital for different function within an organism

Hydrogen bonds form within the amino acid chain, pulling it into a coil shape

The oxygen,hydrogen and nitrogen atoms of the basic structure interact

Same interactions as the tertiary structure however they are between different protein molecules rather than within one
