Chocolate is made from bean to bar and each step in the process is crucial to entice the best flavor from the bean.
Chocolate processing practices haven't changed much from the time of the Maya but the equipment and processes have been refined.

Cacao trees
- Cacao trees produce buds all year in subtropical areas like Central America, or they can be tied to the rain cycle like they are in Africa.
- Changes in climate conditions can cause fluctuations in the growth cycle and harvest.
Drying and Storage
- The drying process differs depending on the climate or size of the cocoa plantation.
- Cocoa beans can be dried out in the sun on trays or mats where the climate permits, or dry in sheds and then sorted and bagged.
- The bags are then delivered to chocolate manufacturers.
