Major Organs
Mouth- opening into the oral cavity; contains teeth, salivary glands, tonsils, & tongue

Esophagus- tube that runs from pharynx to stomach, passage

Digestive Enzymes
Mouth- saliva produced by salivary glands to mix with food to make bolus; mucosa produces mucus to coat bolus

Intestinal Glands- enzymes in duodenum digest all food groups, need neutral pH
Pancreas- lipase (digest fats), pancreatic amylase (carbohydrates), ad trypsin and hymotrypsin (proteins)

Accessory Organs
Teeth- hardest substance in the body, mechanically breaks down food

Gastric Glands- produces mucus, pepsinogen

Pancreas- produces digestive enzymes, releases enzymes into duodenum
Liver- storage of glycogen, fat soluble vitamins, and iron

Layers of GI Tract
Mucosa- produces mucus for reduction of friction and protections; nonkeratinized stratified squamous- located in mouth, esophagus, anus; simple columnar- intestine
Submucosa- areolar connective tissue contains major blood vessel, submucosal plexus-autonomic nerve supply
Muscularis Layer- 2 layers of smooth muscles: inner circular layer & outer longitudinal layer; mouth, pharynx, superior esophagus, anal sphincter
Serosa- outer covering of GI tract, serous membrane composed of thin layer of areolar connective tissue and simple squamous epithelium
