While a bit of an investment, it might be best to do a bit of both worlds. While you should work on slowly implementing a new OS of your choice, it might be best to still have a lot use DOS so that you can gradually see what issues you have with this new operating system, all while making it so you have backups as to not disrupt any flow of work.

Updating to new OS systems immediately. Leaving Ortega and Zara to work out the kinks and issues they will run into trying to get acclimated to the new OS systems.
While updating their OS systems, use new platforms such as Windows. Get everything wireless internet connection so they can get more accurate inventory results as well as easier accessibility.
