Aosta Valley

The cuisine is based on warm soups, rye brads, polenta, rice , potato gnocchi and cheeses like Fontina PDO . Also wild game (venison, goats and beef and pork braised with herbes and spices of the mountain.

Aosta valley doesn't have CDOG wines yet but at the same time it has 8 CDO paired perfectly with the traditional food. (some examples: Valle D'aosta Nus CDO, Enfer d'arvier CDO, Donnas CDO.

In lombardy's plaint we can find a lot of coltivations of rice (more common than pasta). We can remember Risotto alla milanese, Parmigiano Reggiano PDO, Pizzocchericrayfish, frogs' legs and eels, foie gras and the famous Panettone.
Liguria

The climate allow the growing of fruit and vegetables like grapes and olives to produce oil, porcini mushrooms, basil, pine nuts (for the production of pesto) anchovies, tuna, cod and sardines. Also the cuisine offer the classic Focaccia and stuffed tarts.
Wines
Liguaria doesn't has CDOG Wines but we can remember: Colli di luni CDO, Colline di levanto CDO, Val Polcevera CDO.

Liguria is the only coastal region of north-west Italy, but is bordered with
Alps and Apennines, for the most part is composed by Mountains and hills.

Veneto offers a lot of seafood, risottos, cured meats and cheeses. Specialities are the red radicchio, sardelle in saor, spider crabs, black ink cuttlefish risotto, rise, Fegato alla veneziana and beef horse. There are also some desserts like Pandoro and Tiramisù.

Veneto has a lot of varieties of CDOG wines (15) the most important are: Amarone della Valpolicella CDOG, Bardolino superiore CDOG, Conegliano Valdobbiadene Prosecco CDOG, Recioto della Valpolicella CDOG.

Veneto is composed by 29% mountains, 14% Hills and 56% Plains, the capital is Venice. The climate is sub-continetal and temperate.

This region has some Austrian and Slavic influences, clearly visibles in spicy pork, cabbage soups, potatoes and savoury strudel. Differents types of stewed meat, game and cheese sishes, seafood.

Is the italian's food capital, it has the most number of DOP and CDO produits and production. The most famouses are Prosciutto di Parma, Parmigiano Reggiano, Modena balsamic vinegar, shallots, piadina, mandorlotti, Borgotaro porcini mushrooms and a lot more.

Emilia-Romagna is made up of the union of two historical and geographical regions: Emilia which is the part inland; and Romagna which borders the Adriatic Sea. Emilia-Romagna is composed for the most part by the fertile Padana plain but at south of the region we can found the apennines.
