Bacteria
general symptoms include sickness, diarrhoea, stomach cramps, fever - can lead to death in extreme circurmstances
you get food poisoning by eating contaminated food - contains pathogenic bacteria
can take several days or hours for symptoms to show
there are many different types of bacteria
Campylobacter
most common food poisoning in UK
found mainly in raw/uncooked poultry - untreated milk
onset time: 2-5 days
E. coli
lives in inestines of animals
most types are harmless - some can cause kidney damage or death
can be in raw beef, untreated milk/water, unwashed veg/salad leaves
Onset time: 2-5 days
fever, loss of appetite, mild dehydration, vomiting and diarrhea
Staphylococcus aureus
lives on skin and hair, in noses of animals and people
poor personal hygiene can contaminate food
onset time: 1-6 hours
Salmonella
found in raw poultry, untreated milk/eggs
onset time: 6-72 hours
Stomach cramps, vomiting and diarrhea
Listeria
found in soft cheeses, Pate, shellfish
can grow in cold temperatures, e.g. fridge
pregnant women at high risk - lead to miscarriage or health issues in the child
onset time: up to 70 days
Controlling Bacteria
the two most common foods to be contaminated is: untreated milk/eggs
pasteurisation
all milk sold in supermarkets is pasteurised - milk is heated to 72degrees for 15seconds - kills off any bacteria b4 chilling
Vaccinations
bristish lion quality mark on egg shell & boxes is for hens that have been vaccinated against salmonella - wont contaminate the eggs
