Enzymes are proteins that act as biological catalysts - this means they speed up reactions without being used up.

pH affecting enzymes
The pH scale measures the acidity of a sample, which is essentially how much ionic hydrogen or hydroxide is present. changes in pH cause amino acids' atoms to ionize, which can change the shape of an enzyme (composed of amino acids). If the shape of an enzyme is changed, it becomes denatured.

We get nutrients by eating them. They have to be broken down first and then reassembled into our own carbohydrates, proteins and lipids. this is because most of the molecules in food are too large to pass through the absorbing surface of the gut wall
food tests
to test for specific nutrients such as sugars and fats, we use food tests. these can be used to detect the presence of food chemicals, but not how much is present.

SMALL INTESTINE: enzymes produced here (as well as in the pancreas) break down food. pH here is 8-9: slightly alkaline. further on, absorption of digested food molecules takes place. villi increases surface area for increased absorption efficiency

OESOPHAGUS: a muscular tube connecting the throat to the stomach. Peristalsis moves the food along, it does not rely on gravity
STOMACH: mechanically digests food with churning actions while protease enzymes start to chemically digest proteins. hydrochloric acid kills bacteria and regulates optimum ph for protease
MOUTH: mechanical digestion takes place. teeth chew food to break it down and increase its sa:vol ratio. amylase enzymes in saliva begin to breakdown starch (into maltose).
PANCREAS: produces amylase, protease and lipase
digestion is a bodily function which focuses on the ingestion of large, insoluble molecules, by breaking them down into smaller, soluble ones that can be absorbed into the bloodstream.
