The first dose helps the immune system create a response against SARS-CoV-2, the virus that causes COVID-19.
Activates plasma B-cells which produce antibodies to attack the virus. B-cells are short liked so the antibodies rapidly decline

The purpose
Vaccines have been created for thousands of diseases. They protect us from diseases that wiped out 2/3s of europe and can kill whole populations!
The point of vaccines is to increase your autoimmunity to the disease so when you come in contact with it for real; you have antibodies to protect you.
Once you create these antibodies, you brain will memorize them and put them to use next time your body comes in contact with the virus/disease.

Like the coronavirus, other diseases need 2 vaccines as well. To treat the disease Pollio, kids require 4 doses of the vaccine months and years apart.
Another disease that needs multiple vaccines is Rubella. Kids will require 2 does of the vaccine when they are 1-2, and 4-6.
