is a problem for Humanity. Nearly one third of the world’s population lacks regular access to adequate food.
Zero Hunger
Sustainable Development Goal 2 is about creating a world free of hunger by 2030.
In addition, most animal-derived protein sources are related to negative environmental consequences.
With the purpose of promoting a healthy nutrition while respecting the environment, entrepreneurs came up with the idea of using crickets as a protein source.
Green Entrepreneurship
The production “of cricket flour results in 25 times less deforestation, emits 100 times less polluting gases, and requires 2,000 times less water than the same amount of livestock protein” (Bathgate, Rae, 2021).

Cricket flour is expensive, but its protein content is superior to other traditional sources. It is high quality and comes with fiber, it is easily digestible.
Griyum
The purpose of the organization is to nourish Mexico. To achieve so, co-founders came up with an optimal way to operate a cricket farm in a rural community in Queretaro.
They opted for a B-2-B model to sell the flour to companies that make and sell high protein products.
They developed other small producers in Queretaro and Guanajuato to become their providers.
They make sure to have an impact in the food system, climate change, wealth of small producers and nutritive value.
Challenging Hop
The role of insects as edibles has to pass certain barriers, such as public acceptance and liking. Changing such stigma is a big challenge for companies.
The edible insects’ industry faces an additional obstacle. The lack of regulation specifically addressed to the use of insects as food constitutes a barrier for the industry growth.
The consumption of edible insects is on the rise. The edible insects’ industry will be worth 8 billion Dollars in 2030, according to Barclays (Taylor, 2019).
The future of insect farming is so promising.
Uncertain Destiny
As the market switches from a stigmatizing to a demanding one, Griyum faces a dilemma to choose among alternatives to strengthen and expand its business.
The company could keep betting on insect flour for human consumption. Their B-2-B model has still a wide field to keep growing in Mexico.
Another option is to diversify their products. Continuing with their cricket farming, they could widen their offer to include whole insects and/or insect meals.
In the future, Griyum may increase the number of cricket farms in its network and explore a B-2-C product line.
