Purchasing Standards
Storage Room
Should be located in a closed, clean, dry, ventilated room. Any shelf should be clean and 15 cm above the floor level.
If there is no storage room, use a pantry or a place that meets all the standards.
Store food should be covered (closed container or original container) and be labeled with the entry into the storage room.
All storage rooms must have the PEPS system, taking into account refrigeration and freezing.
All bad food should be marked, made aside from the other food and disposed immediately.
All the storage rooms must not have any type of pets, noxious fauna, mold, and visible dirt. They must have an effective preventive control system, they must be periodically clean, and periodically washed.
Detergents and chemicals (insecticides) should be stored else where, closed and labeled, away from the foods.
Fridge

Food should be kept at a temperature of 7ºC or less.
There should also be a thermometer or a temperature measuring device at sight.
There must be constant maintenance and cleaning of the surfaces of the fridge.
Everything must be labeled, well packed and classified depending on the origin of the product (cooked or raw).
In the freezing chamber, the temperature must be -18ºC or less, and there must be airflow between the products.

Fruits
All products vegetal origin should be rejected when presented with moho, weird coloration, bruises and bad smell.
All vegetal origin foods should be cleansed with water, soap, brush and disinfected with Iodine, Cloro or any disinfected allowed.

- Mustn't have bulging, dents or corrosion
- Check the expiration date
Packaged Products
- Bottled or packaged drinks mustn't have foreign matter inside
- Caps not oxidated or violated

-Cookies, bread or tortillas musn't present mold or any different coloration
