structure
-
Three condensation reaction take place in hydroxyl groups of glycerol and the fatty acids to form a triglyceride

The Emulsion Test
-
Lipids are insoluble in water, but soluble in ethanol (alcohol). This fact is mafe use of in the emulsion test for lipids
methods
- The substance that is thought to contain lipids is shaken vigorously with some absolute ethanol about 1 minutes.
- The ethanol is then poured into a tube containing distillate water.
- By shaken it virgorously, it allowed any lipid in the substance to dissolced in the ethanol
- After lipids have been dissolved in ethanol and added to water, they will form tiny dispersed droplet in the water, called emulsion
