There are a branch of single cell organisms call extremophiles which have adapted to be able to live in some of Earths most deadliest and harshest conditions
Some of these conditions are...

Extreme pressure
Environment

Arctic
Tropical
Grassland
Tundra
Freshwater
Marine
These different types of environment is what made different animals have to evolve in different ways to survive. Most had to evolve to multicellular organisms so they could thrive in their certain environment
Gasses/Nutritions
Some animals use different gasses in the atmosphere to create food this process is called photo synthesis it takes in gasses and releases different gasses.
Some single cell organisms can live and get food by nearly absorbing certain nutrients into their blood stream and that is all they need to survive.
Ice Age
When the Earth froze over there were only certain single cell organisms that managed to survive the harsh conditions, if they didn't survive though we wouldn't be alive today.
