LIPIDS
-
Properties of lipids : solubility , Plasticity (how it is spread) , Hydrogenation (oil to solid)
-
Oxidative: Forms when oxygen is forced through the double bond of an unsaturated fatty acid . unpleasant smell. Eg Oil solidifying in a pan
Hydrolytic : When enzymes or bacteria lipids changing them to fatty acids and glycerol . unpleasant smell . Eg freezers when enzymes are not destroyed
HOW TO PREVENT OXIDATIVE RANCIDITY: store liquids in a cool dark place, wrap well

Monounsaturated
each carbon atom not saturated by hydrogen. One double bond. Soft or liquid at room temp. Plant sources. Eg Oleic acid found in olive oil
Polyunsaturated
Each carbon atom not saturated in hydrogen. More than one double bond. Soft or liquid at room temp. Originate from Plant / marine sources. Eg Linoleic acid in corn oil veg oil
Essential fatty acids = cannot be manufactured in the body and must be supplied by the diet Eg Linoelic acid
Functions: build cell membranes essential for growth . Counteract the hardening effect of cholestrol in the atreries which helps prevent CHD
omega 3 Fatty acids : Polyunsaturated , relates to the positioning of the bond , between 3rd and 4th carbon atoms . sources oily fish , salmon, nuts soya beans . Benefits: Reduce risk of heart disease , strokes increase HDL cholestrol levels
