CHAPTER 6 : FOOD SAFETY
What is food safety?
1) Food safety refers to the conditions and practices that preserve the quality of food to prevent contamination and food-borne illnesses.
2) It is important to ensure that all types of foods are properly stored, prepared and preserved so they are safe for consumption.
3) This includes a number of routines that should be followed to avoid potentially severe health hazards.
i- Preventing foods from becoming contaminated.
ii- Making sure foods are stored properly.
iii- Basic kitchen sanitation guidelines are in placed.
Foodborne Illness
Common symptoms of foodborne illness include vomiting, diarrhea, abdominal pain, fever and chills.
Foodborne illness usually arises from improper handling, preparation or food storage. The action of monitoring food to ensure that it will not cause food borne illness is known as food safety.
Foodborne Illness- Any illness resulting from the consumption of contaminated food, pathogenic bacteria, viruses or parasites that contaminated food, as well as chemical or natural toxins such as poisonous mushrooms.
