To discover the principles that govern the way the sounds are organised in languages ,which sound units are used and what patterns do they form.
When I listen to someone speak in a language I know ,my brain inserts gaps in the sentence ,to differentiate the words.
When someone speaks ,they say the words in one stream without any pauses.
This happens because the brain knows the individual words and hence can identify it and do the separation.
This is the reason why when we hear a foreign language ,it sounds like a garble.
