CONTRAST - if Oryx could be portrayed as the "female ideal", then Jimmy's mother would be the opposite, the "type of women men don't like" - she disagrees and stands up for her opinion, she isn't always happy, etc. She (and Oryx) also show how women are objectifies - Jimmy's mother is viewed by him as his mother, not as a human being who is allowed to have flaws and desires.
Jimmy's mother is expected to be the 'ideal' mother/wife and he is hurt and blinded by the fact that she left him for support her own values. He doesn't realise there is good in her.

despite that Jimmy has a negative view of his mother, her as a motif shows that she is more than just that.
