This shows that Candy is old and because of his accident, he is not able to do some works well. Also, it separates him from other and makes it clear that Candy unlike other workers.

“I oughtta of shot that dog myself, George. I shouldn't oughtta of let no stranger shoot my dog.”
This shows that Candy is regretting letting stranger(Carlson) to kill his own dog. Moreover, it shows some worries about Candy, himself's future. I think that he has no power to decide his own life, and to decide just a little pup's life. Also, it can show us that he is living very hazardous life. He can be kicked out from the farm anytime when his boss wants him to leave.

“Maybe it’d hurt him,” suggested. “I don’t mind
takin’ care of him.”
This suggests that Candy is a kind man. Also, in the book, it mentions that the dog is old, so that it had some lack of abilities. I think candy feels so pity for the dog because he felt some connection between him and the dog and his boss might fire him from the farm.
