Nutrition Ch.1: Lecture 2
K calories
amount of energy released is measured in calories
a tiny unit of energy
energy is expressed in 1000 c metric units called kcalories
they are not constituents of food but a measure of energy the food gives you
carbs are 4 kilo/g
protein are 4 kilo/g
fat is 9 kilo/g
fat has a greater energy density than the other two
if you know the grams of each nutrient than you can multiply the carbs by 4, proteins by 4, and fats by 9, then add together all the numbers
all food contains a mix of carbs, fats, and proteins
they can be predominantly nutrients
pure foods can include sugar and oil
Energy storage
uses energy yielding nutrients
body uses to build new compounds
fuels metabolic and physical activites
excess rearranges into storage compound for later use
too many kcalories from any of the nutrients will cause a weight gain
Alcohol
not nutrients because it does not support bodies growth, maintenance, repair
does contain 7 kcalories/gram cause weight gain
Dietary Reference Intakes
a set of standards that supports health: energy, nutrients, physical activity, other components
used to meet needs of most healthy people
